Ok, so I set my 55 tank up on Sunday. I used 70pds of Live Rock out of an existing tank (thanks juandean), and the store bought "live sand". Things have been perfect ever since. Ph is at 8.2, Amonia is as 0ppm, Nitrite is at 0ppm, Nitrate is at 5ppm.
So, what I'm asking is why haven't I seen the spikes yet? Do I need to add a fish to get the cycle process started? Thanks a bunch.

Nope, give it a little more time. A cycle should typically take 6 to 8 weeks, and it will take a few more days before anything that has already died off to deteriorate into ammonia, then nitrites then nitrates. Having used all good, cured rock will accelerate things drastically, but using the store bought sand will potentially generate some of the cycle, as well.

Just be patient, it'll happen. :)

Mince up a piece of uncooked seafood (a frozen shrimp) and put it in. Not too much. That will get it going.

No need to add a fish to start a cycle. Perhaps you won't see a typical cycle with the full blown ammonia spike because the rocks did not release any die offs. But it's a new tank so there will be smaller cycles. Wait a few more days to see that the algae and diatom phase have arrived before adding a clean up crew.
And you're doing the right thing by being patient and asking questions.
It might be a good time to read this post once or twice.

Thanks a bunch everyone. I have read that post many times, and then a few more again to make sure I'm accounting for everything. I just couldn't find anywhere what the process was with using established live rock out of someone elses tank. I figured I wouldn't have the die off (as bad), but didn't know if I had to add something alive. Yea, I'm waiting for the algea bloom, then add the cleaner crew. Do you add all the cleaner crew at the same time, or do you slowly add more over time?
